How We Make Quality Foods
Step - 01
1- Inspection: check incoming raw materials (quality, temperature, appearance, packing integrity).
2- Weighing & recording: record lot numbers, supplier info, weight, and temperature.
3- Storage: store at refrigerated/frozen conditions immediately to maintain cold chain.
Step - 02
1- Sorting &grading: remove defective or foreign material.
2- Washing: clean vegetables and fruits
Cutting/ portioning: size reduction to recipe specifications.
3- Blanching (optional): for vegetables to inactive enzymes.
Step - 03
1- Batch preparation: weigh ingredients based on recipe formulation.
2- Mixing: combine different components.
3- Homogenization: ensure even distribution of ingredients.
(this step should be done in a temperature-controlled room to avoid thawing
Step - 04
1- Individually quick frozen (IQF) or blast freezing: rapid freezing prevents large ice crystal formation and
preserves texture.
2- Core temperature check: ensure product reaches at least-18c or lower.
3- Storage: keep in frozen storage until packaging
Step - 05
1- Primary packaging:
Bags (polyethylene, multilayer films, vacuum packs),
Trays with lidding film,
Cartons or pouches.
2- Sealing: heat-seal or vacuum-seal to prevent contamination and freezer burn.
3- Labeling: product name, net weight, lot/batch code, production date, expiry date, storage instructions.
Step - 06
1- Cartooning/boxing: group customer packs into cartons or master cases. 2- Palletizing: arrange cases on pallet shrink wrapping/stretch wrapping: for transport stability.
Step - 07
1- Frozen warehouse: store at -18c or below.
2- Cold chain logistics: transport in refrigerated trucks maintaining required temperature.
